This book explores food from a philosophical perspective, bringing together sixteen leading philosophers to consider the most basic questions about food: What is it exactly? What should we eat? How do we know it is safe? How should food be distributed? What is good food? David M. Kaplan’s erudite and informative introduction grounds the discussion, showing how philosophers since Plato have taken up questions about food, diet, agriculture, and animals. However, until recently, few have considered food a standard subject for serious philosophical debate. Each of the essays in this book brings in-depth analysis to many contemporary debates in food studiesSlow Food, sustainability, food safety, and politicsand addresses such issues as happy meat,” aquaculture, veganism, and table manners. The result is an extraordinary resource that guides readers to think more clearly and responsibly about what we consume and how we provide for ourselves, and illuminates the reasons why we act as we do.

Very very good, highly recommended for classroom use
By Daniel Hicks
This book is an anthology, intended (I think) to be used in college philosophy classes. I recently reviewed it, along with the similar anthology Food Ethics edited by Paul Pojman, for the journal /Agriculture and Human Values/. That review will be published sometime around fall 2013. What follows are excerpts from that review. In brief, I think Kaplan's anthology is very very good, though it does not contain enough to serve as the single textbook for a semester-long class.
The book includes 17 readings by 21 authors, all of whom are academics and 15 or so of whom have some claim to being professional philosophers. Roughly, the major topics covered are table manners, locavorism, aesthetics, hunger / food security, genetically modified organisms (GMOs), food safety, non-human animals and vegetarianism, sustainability / environmentalism, and nutritionism. As the high ratio of topics to readings suggests, almost all of the topics are covered in only one or two readings. Nothing indicates that any of these essays have been previously published, though I know that Gary Comstock's essay on GMOs was published at least ten years ago, in Ruse and Castle's anthology Genetically Modified Foods: Debating Biotechnology. (I also have an Amazon review of that anthology.) Several of the contributions include citations within the last five years or so, and nothing seems more than about ten years old.
Kaplan does a better job than Pojman of emphasizing the complexity and "wicked" nature of the problems with the contemporary food system. For example, David Fraser's contribution is motivated by the question of whether "animal ethics philosophy, as it has evolved to date, lay[s] a suitable foundation for ethicists to engage in the issues raised by the contemporary use of animals in food production" (191). Fraser argues that previous contributions to animal ethics philosophy fall short due to a lack of attention to complexities and uncertainties, both with respect to the problems being analyzed and in our understanding of animals themselves. While Fraser's contribution is the most explicit on the importance of complexity, uncertainty, and interdisciplinary engagement, many of the others also take such an approach. I think that this approach is characteristic of the recent "public philosophy" or "socially relevant philosophy" movement, and so Kaplan's anthology would fit well in an "ethics of eating" course that aims to contribute to this movement.
But the small size of the Kaplan anthology (only 17 readings) limits it, in two notable respects. First, almost every topic is only discussed once or twice. Second, none of the readings address each other. One strength of the Pojman anthology was that many of the chapters contained small debates. A paper by Tom Regan on animal rights is followed with an explicit criticism of Regan by Mary Anne Warren. As a contrasting example, in Kaplan's collection, Gary Comstock gives a series of responses to popular worries about GMOs --- that this technology involves wrongfully "playing God" or "commodifying life." Comstock's responses, in my opinion, are uncharitable and fail to understand these worries. Since this is the only reading directly on GMOs, these problems are easy to miss.
That said, what the Kaplan anthology does it does well. I would certainly recommend it to any philosopher teaching a philosophy and food class, especially a class that aims to model socially engaged philosophy. While it will not provide the foundation for such a class, it will be a valuable addition.
