The Ethnographic State: France and the Invention of Moroccan Islam, by Edmund Burke III

Alone among Muslim countries, Morocco is known for its own national form of Islam, “Moroccan Islam.” However, this pathbreaking study reveals that Moroccan Islam was actually invented in the early twentieth century by French ethnographers and colonial officers who were influenced by British colonial practices in India. Between 1900 and 1920, these researchers compiled a social inventory of Morocco that in turn led to the emergence of a new object of study, Moroccan Islam, and a new field, Moroccan studies. In the process, they resurrected the monarchy and reinvented Morocco as a modern polity.

This is an important contribution for scholars and readers interested in questions of orientalism and empire, colonialism and modernity, and the invention of traditions.

"4/5 . . . Highly engaging."--Kevin Winter"San Francisco Book Review" (01/28/2015)

"La composition brillamment degagee par l auteur." ("Brilliantly clear composition by the author.")--Mehdi Sakatni"lectures" (09/01/2015)"

From the Inside Flap
"In this long-awaited study, Edmund Burke argues that the Mission scientifique du Maroc and the sociology of Islam it engendered was a complexly colonial project--shaped as much by Algeria as by British India and blind to indigenous sentiment. Never has the genealogy of imperial ethnography been so carefully excavated, nor have the limits of colonial social science been so painstakingly exposed. If the invention of 'Moroccan Islam' was a pathway to the modern state, it is also extraordinary evidence of the impact of Western ethnography on the business of colonial hegemony."
—Antoinette Burton, author of Empire in Question: Reading, Writing and Teaching British Imperialism

"Edmund Burke's much-anticipated study of the politics of knowledge production offers a wide-ranging history of the French colonial scholarship that, in imagining into being a 'Morocco that never was,' set in train powerful ways not only of representing but also of legislating and enacting social life, religious practice, and political authority that continue to have their effects in the present. Accessibly written and grounded in a lifetime's detailed research, this is a major contribution from one of the most respected scholars of North African and world history."
—James McDougall, Trinity College, University of Oxford

"Edmund Burke's lucid, critical writing and his interests in world history and modern North Africa come together in this important book. It should be compulsory reading for everyone interested in colonial history and the complexity of the relation of 'scientific ethnography' to the practices of imperial powers. It speaks to contemporary issues."
—Michael Gilsenan, professor of anthropology and Middle Eastern and Islamic Studies at New York University and author of Recognizing Islam and Lords of the Lebanese Marches

“Burke’s magisterial study of how the notion of Moroccan Islam came to be challenges current theories of empire by offering a counter-model with wide applicability. By reinterpreting the colonial imaginary and its archive across multiple scales, ranging from the individual to the global, Ethnographic State not only unmasks ‘scientific imperialism,’ revealing its detours, incoherence, and failures but also explains how these were recast as a seamless, untroubled colonial (and post-colonial) narrative of something that never was.”
—Julia Clancy-Smith, Department of History, University of Arizona

France & Morocco

"The Ethnographic State: France and the Invention of Moroccan Islam" examines the underpinnings of the French protectorate in Morocco (1912-1956). Although the notion of a European nation “protecting” a non-European one was not new, Morocco under soldier-administrator-proconsul Hubert Lyautey (1854-1934) was to be something special. As one candidate for a top administrative post put it, yes, he had worked in a protectorate before, but not in “the protectorate.”

Burke’s expert account of what France knew (and did not know) about Morocco and how this affected everything it did for 40 years is a cautionary tale. Convinced of their superiority in body, mind, and spirit and everything that constituted the advanced material and technical world of the 20th century, the French claimed to bring a new and “scientific imperialism” to Morocco. What this meant and how it was applied (and often mis-applied) to the conquest and rule of the people, places, and things of Morocco is the key element in Burke’s engaging story. As the title proclaims, France built the protectorate on its understanding of Morocco’s ethnographic realities. In their process of nation-building (or state-protecting) and as an element in the notion of “indirect rule,” Frenchmen “invented” an Islam rooted in the spiritual and political authority of the Moroccan sultan. In exploring why and how all this happened, "The Ethnographic State" probes the foundations and legacies of empires both past and present. It is a very good and very important read!

Published to accompany the major retrospective exhibition on Hung Liu, Summoning Ghosts is a comprehensive look at the work of this extraordinary Chinese-American artist. A pioneer in Chinese contemporary art before the Chinese avant-garde came into being, Lui’s life spanned two centuries and bridged two totally different economic situations. The wide-ranging essays in this book, which features 140 color illustrations, reflect on how Hung Liu’s evocative art is inextricably bound to her equally rich and complex life. While considering the artist’s primary work as a painter, the contributors also celebrate her murals, permanent and temporary installations, photography, and video.

The Life of Cheese: Crafting Food and Value in America (California Studies in Food and Culture), by Heather Paxson

Cheese is alive, and alive with meaning. Heather Paxson’s beautifully written anthropological study of American artisanal cheesemaking tells the story of how craftwork has become a new source of cultural and economic value for producers as well as consumers. Dairy farmers and artisans inhabit a world in which their colleagues and collaborators are a wild cast of characters, including plants, animals, microorganisms, family members, employees, and customers. As “unfinished” commodities, living products whose qualities are not fully settled, handmade cheeses embody a mix of new and old ideas about taste and value. By exploring the life of cheese, Paxson helps rethink the politics of food, land, and labor today.

From the Inside Flap
“Paxson's book, like her subject matter, is lively, evocative, and masterfully crafted."—Susanne Freidberg, author of Fresh: A Perishable History

“Through vivid storytelling, Heather Paxson advances a post-pastoral food ethos that reconsiders contemporary beliefs about America’s food commerce and culture, reimagines our relationship to the natural world, and redefines how we make, eat, and appreciate food. For cheese aficionados, activists, and food scholars alike, reading The Life of Cheese will be a transformative experience.”—Amy Trubek, author of The Taste of Place: A Cultural Journey into Terroir

“The Life of Cheese is the definitive work on America's artisanal food revolution. Heather Paxson's engaging stories are as rich, sharp, and well-grounded as the product she scrutinizes. A must read for anyone interested in fostering a sustainable food system.”—Warren Belasco, author of Meals to Come: A History of the Future of Food

“This vivid ethnography of contemporary artisan cheesemakers explores both the labor of hand crafting and the moral overtones of this calling. For those who participate, ‘the life of cheese’ is indeed a calling in the spiritual or philosophic sense, entailing a journey through the biopolitical world of agribusiness, bacterial cultures, and the FDA. After reading this book, visiting a cheese counter will never be the same!”—Theodore C. Bestor, author of Tsukiji: The Fish Market at the Center of the World

“Anyone who loves cheese will find The Life of Cheese a fascinating read, illuminating layers of meaning in the artisan cheese revival that are rich and complex, like the flavors and textures of cheese itself. Heather Paxson is simultaneously documentarian and theoretician in her explorations of cheesemaking and its values, culture, socio-economics, and ‘microbiopolitics.’”—Sandor Ellix Katz, author of The Art of Fermentation and Wild Fermentation

The ethics, economics and emotional register of artisanal cheesemaking
By LN
The Life of Cheese focuses on artisanal cheese production and consumption in Wisconsin, Vermont and California with an emphasis on the craft of cheese making. The book also looks at the complexities of the micro-biome of cheese including a thoughtful discussion of the intersection where regulatory frameworks and the different microbiological realities of diverse cheese types introduce some unexpected slippages. Some cheeses get safer to eat after 60 days. Others might actually become rather dangerous (not to mention less delicious) past the 60 day mark. Paxson's treatment of concerns like this would be interesting for cheese lovers but is also quite useful for technology studies scholars and people interested in the construction of knowledge itself.

For a food studies title, this book included the requisite history of the craft and consumption practices we've come to expect any food studies scholarship would have but it goes beyond that to integrate some technology studies and consumption studies work. I especially liked the way she pointed out that new artisanal cheese farmers have to both make reference to old traditions and ignore the reality that the bulk of 'traditional' cheesemaking took place (and still takes place) in large companies, in part because small-scale farms are economically tenuous.

I would have liked to see more about how the idea of contributing to the social good by eating locally produced cheese is connected to other ethical consumption practices. Paxson is rightfully complex in her discussion of what may or may not be 'ethical' about eating local cheese, but she doesn't go far enough to connect the artisanal cheese narrative to larger cultural tropes of situating moral labor in small-scale consumption decisions and production practices.

Entertaining and informative read!
By CBiscuit
Heather Paxson’s book does a great job of looking into the artisanal ‘slow’ food culture that has been steadily growing in the United States. The book evidently focuses on the cheese making aspect of this subculture, while also going into the particulars of the various kinds of dairy farming involved. From an anthropology perspective Paxson takes an approach of not only breaking down the process of artisanal cheese making but also looking into the lives and motivations of those involved in the trade. The diverse backgrounds of the cheese makers and farmers find a commonality by having similar motivations. These motivations span from wanting to work with animals by living a farm life to creating a sustainable business to pass onto future generations. Ultimately Paxson’s work is an entertaining read that is still able to be a valid anthropological study in subculture world of artisanal cheese making.
The three different types of animals used for cheese making all require different skill sets and thus attract different character types as well. These three animals are cows, sheep, and goats. Paxson states that the dairy farmers or cheese makers have very different personalities depending on the type of animal they choose to work with. Sheep farming is more in line with those who enjoy living on the pastureland, as sheep require extensive roaming space and need to be moved frequently. Goats are for those who really enjoy working with animals, as Goats are said to be the best animals to own as they enjoy people and have unique personalities. Finally cows are said to be for those who enjoy working with machinery. Cows being the most popular form of dairy farming are also the most efficient, as they produce the largest quantities of milk and require the least amount of moving. Each animal type also requires a different method for care, milking, and for cheese production.
In both artisanal and industrial cheese production cows are the most common animals used. As mentioned cows produce the largest quantities of milk and are the most efficient milk producers. Paxson mentions that there is a large quality difference between industrial cow milk production and artisanal. Industrially farmed cows are largely fed a grain diet and are not able to pasture graze. Cows used for artisanal cheese making are on the other hand raised on mostly pasture grass and are rotated to new pastures regularly. Being raised on their natural diet apparently gives the milk and ultimately cheeses a smoother and better taste. The digestion process of rumination for cows also helps create this fine tasting milk that is desired by the artisanal cheese making community. Industrially farmed cows are fed grain so they do not go through the process of ruminating the cud. Sheep and goats produce much less milk but the quality and taste is significantly different that it results in different cheeses. Sheep’s milk in particular has the highest quality of fat, which results in a very different cheese and cheese making process in comparison to others. The diverse background of the cheese makers also illustrates the unique sub culture of artisanal cheese making.
Paxson interviews and spends time with many different cheese makers. It is interesting to see and learn about their diverse backgrounds and motivations for becoming cheese makers. Many of these people previously had little to no experience with cheese making or even any form of farming. While Paxson mentions many different backgrounds the majority of these artisanal craftsmen can be summarized in two major categories. The first are those from cities that had success in their corporate life but are choosing to leave behind the office for one of hands on work in nature. While the second main group is made of those that had access to some form of milk producing animal and have gotten into cheese making as a means to maximize profit. The first group seems to perhaps have been motivated by some glamorized image of a gentleman farmer or getting to work with nature. Whatever the case this group of former office workers appears to be a quickly growing one. To such an extent that members of the second group are mentioned to often try to distance themselves from the first. As many cheese makers choose to identify themselves as farmers, which to them resonates with hard workers producing milk and creating cheese to have a living. While seeing the inexperienced former city cheese makers as those who are in it for an investment or some glamorized idea of artisanal crafts. Regardless of the diverse backgrounds of the cheese makers they both have to deal with the same complex issues with production and FDA regulation.
Artisanal cheese makers are faced with many regulatory issues that jeopardize their ability to be profitable. Perhaps the most major issue is the one of pasteurization. The FDA requires that certain measures be taken to insure that the milk and cheese are safe to eat. The reason why this causes an issue is that a pasteurizer is an expensive machine that not many artisanal farmers can afford. The FDA also requires that certain kind of cheeses are aged for 60 days to ensure they will be safe to consume. The legitimacy of these regulations is debated, with Paxson speaking with proponents for and against. Some argue that raw milk products are dangerous and have led to deaths, while many in the cheese making community think the regulation are excessive and jeopardize the viability of many businesses. Many of the farmers believe that if proper measures are taken place then raw milk can be safety used with no risk to the consumer. While both sides have their arguments it is true that the situation causes for a more complex process of production by following in place regulations.
The Life of Cheese provides the reader with an in-depth look into the ‘old-school’ subculture of artisanal cheese making in America. Paxson does a great job of covering the different craftsman, farmers, animals, methods, and locations involved. This background leaves the reader with a deep knowledge of who is involved and what takes place to get the desired results required for successful artisanal cheese making. Paxson’s work is a great example of how to look into a craft/production culture and is thus a great addition to any anthropology course of study. Her approach could be transferred to essentially any other food production community with similar success. Overall The Life of Cheese is an informative, entertaining, and valuable read.

Fast-Forward Family: Home, Work, and Relationships in Middle-Class AmericaFrom Brand: University of California Press

Called “the most unusually voyeuristic anthropology study ever conducted” by the New York Times, this groundbreaking book provides an unprecedented glimpse into modern-day American families. In a study by the UCLA Sloan Center on Everyday Lives and Families, researchers tracked the daily lives of 32 dualworker middle class Los Angeles families between 2001 and 2004. The results are startling, and enlightening. Fast-Forward Family shines light on a variety of issues that face American families: the differing stress levels among parents; the problem of excessive clutter in the American home; the importance (and decline) of the family meal; the vanishing boundaries that once separated work and home life; and the challenges for parents as they try to reconcile ideals regarding what it means to be a good parent, a good worker, and a good spouse. Though there are also moments of connection, affection, and care, it’s evident that life for 21st century working parents is frenetic, with extended work hours, children’s activities, chores, meals to prepare, errands to run, and bills to pay.

Our Dying Planet: An Ecologist's View of the Crisis We Face, by Peter Sale

Coral reefs are on track to become the first ecosystem actually eliminated from the planet. So says leading ecologist Peter F. Sale in this crash course on the state of the planet. Sale draws from his own extensive work on coral reefs, and from recent research by other ecologists, to explore the many ways we are changing the earth and to explain why it matters. Weaving into the narrative his own firsthand field experiences around the world, Sale brings ecology alive while giving a solid understanding of the science at work behind today’s pressing environmental issues. He delves into topics including overfishing, deforestation, biodiversity loss, use of fossil fuels, population growth, and climate change while discussing the real consequences of our growing ecological footprint. Most important, this passionately written book emphasizes that a gloom-and-doom scenario is not inevitable, and as Sale explores alternative paths, he considers the ways in which science can help us realize a better future.

From the Inside Flap
" Our Dying Planet is the most powerful statement on the future of life on earth I have ever read. Starting with the title, which I admire greatly, it delivers the sort of honest, accurate, no-punches-pulled assessment you would expect from a scientist who has seen the problems first hand. Coral reefs appear set to be the first major ecosystem to go extinct. Few people know more about this than Peter Sale. If every scientist were to speak as convincingly as Sale, the public might finally grasp the seriousness of the course on which we've set our planet."—Randy Olson, author of Don’t Be Such a Scientist

“Peter Sale's book shows us the exquisite sensitivity of ecosystems to the consequences of human activity. This is the anthropocene epoch, a time when human beings have become a force of nature, altering properties of the biosphere on a geological scale. Read this and you will know it is very late and we must act.” —David Suzuki, author of The Sacred Balance and The Legacy

“Disruptions such as overfishing, forest desecration, ocean acidification and pollution, and the wholesale destruction of coral reefs have already changed the earth disastrously. These problems will not fix themselves. For an articulate and crucial discussion of the mess we've made — and with some small hope for the future — you must read this book."—Richard Ellis, author of The Empty Ocean and The Great Sperm Whale

“A bold and convincing explication of the forces inexorably leading to an environmental collapse, and sooner than most people think. Sale, a leading ecologist, tackles some sacred cows – including the implications of human population growth – and shows the many synergisms between impacts that would be devastating even if they acted alone – which they don’t. No one will read Our Dying Planet and remain complacent, but Sale sketches some promising paths out of our dilemma.”—Daniel Simberloff, coeditor of Encyclopedia of Biological Invasions

About the Author
Peter F. Sale is Assistant Director, Institute for Water, Environment, and Health at United Nations University and University Professor Emeritus at the University of Windsor in Ontario, Canada. He is the author of The Ecology of Fishes on Coral Reefs, Coral Reef Fishes, and Marine Metapopulations.

Tough Love, With Science
By Jon at Uwindsor
Peter Sale is an able communicator of difficult news and in this book gives the reader his informed take on the major environmental crises facing us. These crises are essentially all global environmental "elephants in the room" as he sees them, and Sale uses science, plus his own life experiences as an ecologist to tell the story.
Sale's book is that of a leading coral reef scientist and ecologist of note. He has broad experience and in the book speaks cogently to all the major ecological crises confronting us. His narrative weaves together engaging autobiographical and firsthand field experiences from over the past forty years. The story is at once a kind of paean to snorkeling in some of the sweetest reef environments around the world and a compelling case for an objective way forward in a world of over-consumptiveness.
The book is clearly written including throughout little personal details often held in footnotes that bring the author front and centre, while remaining in the footnotes; the text is admirably objective for so personal a treatment of this subject.
Sale takes the reader on a fascinating tour of the world, mostly visiting marine field stations and coral reefs of the world that he has been to many times and examined closely over decades, and which he connects to current ecological realities. Along the way the reader is introduced in clear and engaging ways to ecological and demographic fundamentals -trophic level, age cohort, ecological footprint, biocapacity, etc., that help us understand modern day realities within the realms of fisheries ecology, coral reef biology, forestry and biodiversity patterns, as well as climate change.
The science is described clearly and its relevance is well demonstrated. Sale's gentle absence of patience for such non-nay-saying organizations as the FAO helps convey something of the real-world difficulties we face when it comes to real-world `solutions' to these large ecological crises. I highly recommend this excellent book.

A call for understanding and action
By Anna Mallin
Peter Sale is an academic. In his book, Our Dying Planet, he addresses a non-academic audience and reviews the ongoing changes in the natural environment in which we live. He states that we are now experiencing the "Holocene Extinction" - an extinction of species that may be proceeding at a much faster pace than at any previous time in our planet's history. Does this reduction of number of species matter? Perhaps not much on an individual level - the world's ecosystems can perhaps survive the loss of the Dodo. But at some point the cumulative effects will cause major disruptions, the tipping point will be exceeded and the world around us will become a very different place from the one we know.

What is the cause of our Holocene Extinction? The over-simplified answer (which does not do justice to Sale's full arguments) is - too many people consuming too many resources at a rate at which they cannot be replenished coupled with excessive use of fossil fuels.

Sale examines the importance of "ecological complexity" and recasts our understanding of "resilience" by suggesting that particular ecosystems (or perhaps particular "patches" of ecosystems) have "inertia" and can withstand a certain amount of disruption until such time as disruption is so overwhelming that the ecosystem, or patch, changes its character - for example from forest to desert or from sea-ice to open water.

Sale reminds us that technologies exist NOW to allow us to improve matters by replacing fossil fuels with energy from falling water, solar, wind, waves, etc. He states forcefully that we know the answers. We already know what to do. For example, reduce energy use by building to LEED standards, enlarge railway nets to reduce energy used in truck transport, encourage smaller numbers of children, etc. What we lack is public consensus and the political will to do it.

Sale's goal is to cause us all to come to a very widespread understanding of why we must change our ways - and to do so on ALL fronts. His hope is that this understanding will help to create a the sea change in public attitudes and behavior that may, finally, persuade politicians to pay attention to assuring that the global ecosystems remain habitable for our children and their children.

Sale's litany of unhappy news is presented with a lively and accessible writing style, peppered with frequent intriguing anecdotes from his research life (for example, observation of the real estate transactions of damsel fish) and some most intriguing real-life examples of "doing it right" - of hopeful management of the sort that might steer us away from the looming disasters. There IS hope - if we can only manufacture the concerted public and political will to reduce our reliance on fossil fuel and, most of all, to reduce our population growth.

On reefs and renewal
By jakeofish
Our tradition of environmental literature has been built by thinkers ranging from philosophers (Walden, Leopold), statesmen (Marsh, Gore), journalists (Kurlansky, Quammen), activists (Muir, Maathai), novelists (Abbey, Bass), and others of many and varied stripes.

But in my view, the most fundamental, and often the most penetrating, contributions to this body of thought come from research scientists. For environmental issues have at their core processes operating in the realms of ecology, oceanography, geology, molecular biology, evolutionary biology, climatology, and other disciplines of the physical and biological sciences. Therefore, the insights of Paul Ehrlich, E.O. Wilson, Jared Diamond and others of their ilk help us understand these challenges at their most fundamental level.

Joining this group of accomplished research scientists who have stepped out of the ivory tower to convey crucial messages much more far and wide steps Dr. Peter Sale. Dr. Sale is arguably the world's foremost expert on the ecology of coral reefs, and has spent a lifetime pushing the limits of our understanding of these complex and fascinating ecosystems. Now, in "Our Dying Planet," Sale uses coral reefs as a lens for understanding the challenges facing our planet and ourselves. For coral reefs sit at the nexus of nearly all of the major threats to environmental sustainability: climate change, overharvesting, pollution, watershed management, coastal development, and other impacts. Accordingly, they serve as the proverbial "canary in the coal mine" of where we might be headed if we don't change our ways.

But Sale uses coral reefs not simply as a lens, but also as a springboard. The same suite of threats jeopardizing the very existence of coral reefs are also bringing pressure to bear on forests, the larger ocean, and the global climate system. Sale turns his keen ecological insight toward these other critical systems as well, weaving together a story of a whole that will deteriorate with greater speed and force than the sum of its parts if we don't quickly recognize the reality of where we stand and the actions needed to steer a different course.

And this is the most important contribution of "Our Dying Planet". Despite its sobering name, and despite the dire picture it paints of how we are pushing limits that we don't fully understand, Sale offers a hopeful message. He describes very clear, achievable steps that we can take, including many that we have already taken in small doses but now need to scale up, to chart a different course toward ecological resilience and productivity, to the benefit of nature and ourselves.

Anyone who has met Dr. Sale (as I have) knows what a measured and thoughtful, yet sharp and really rather witty, demeanor he portrays. That intellect and wit comes across in his writing as well (his footnote about "fishers" on page 17 in particular gave me quite a chuckle). He clearly explains complex science and what it tell us about our possible future, gives it life through humor and anecdote, and pulls no punches with his warnings while still inspiring hope with his roadmap toward a better future. "Our Dying Planet" is well worth reading by anyone concerned with the fate of humanity and our world.

The Science of Wine: From Vine to Glass, by Jamie Goode

Praise for the First Edition

“Winemaking these days is a complicated process that cannot always be understood intuitively. Fortunately Jamie Goode’s The Science of Wine: From Vine to Glass explains some of the terms that critics toss around. . . . Mr. Goode manages to make then lively and provocative.”—Eric Asimov, New York Times

A thoroughly revised and updated Second Edition of this essential and groundbreaking reference gives a comprehensive overview of one of the most fascinating, important, and controversial trends in the world of wine: the scientific and technological innovations that are now influencing how grapes are grown and how wine is made. Jamie Goode, a widely respected authority on wine science, details the key scientific developments relating to viticulture and enology, explains the practical application of science to techniques that are used around the world, and explores how these issues are affecting the quality, flavor, and perception of wine. The only complete and accessibly written resource available on the subject, The Science of Wine: From Vine to Glass engagingly discusses a wide range of topics including terroir, biodynamics, the production of “natural” or manipulation-free wines, the potential effect of climate change on grape growing, the health benefits of wine, and much more. A must-have reference for a wide audience of students, winemakers, wine professionals, and general readers interested in the science of wine.

The Second Edition features:

* A fresh new design with 100 color illustrations throughout

* Discussions of some of the most hotly debated issues including genetically modified grapevines, sulphur dioxide, the future of cork, and wine flavor chemistry

* New chapters on soils and vines, the science of grape varieties, oxygen management and wine quality, red wine production techniques, and the role of language to describe the subtleties of taste

A bit schizophrenic in approach and tone.
By Craig Carlson
Admittedly, I had high expectations. I had heard many good things about this book and in many ways it is excellent. Unfortunately, in many ways it is schizophrenic and, though well-written, not carefully written. That was disappointing considering the book is intended as somewhat of an introduction to a general audience.

What I liked about the book is Goode's ability to present issues in wine making that would be very interesting to a general audience. His explanation of biodynamics is excellent, as were his explorations of corks, grafting and wine and the brain.

But here are some unfortunate problems with The Science of Wine that prevent it from being a great book.

The opening chapters on the natural history and viticulture of grape vines are good. But when Goode leaves the vineyard and begins explaining the wine making process, I would advise -- if you are not familiar with the winemaking process -- that you read an actual introduction to it before proceeding.

He jumps from the vineyard to the winery with a chapter on "whole-cluster ferments and carbonic maceration" and accelerates quickly making points out of left field, such as "In carbonic maceration there is therefore a fall in acidity levels that can be quite significant, with titratable acidity (TA) declining as much as 3.5 g/liter and pH increasing by up to 0.6 units."

Goode neither provides a background that gives the reader any context to what this means nor defines the terms. It's a statement that requires illumination -- which is the hard work required of a non-fiction writer. There are numerous examples of this in the book.

There are also editorial errors when Goode uses jargon such as the French word élevage, which refers to the development and early aging of wine before it's bottled. Five pages later you finally get a definition. One wonders whether Goode's editors gave the book a read-through before sending it off to the printer.

Finally, there are long passages in which Goode writes straight prose, followed by long passages where he relies heavily on interviewees to provide multi-sentence material information. The book seems to have two voices which I suspect is a result of repurposing text from news columns he's previously written.

I recommend The Science of Wine. I'm just not jumping up and down about it.

An important education and wonderful reading for all wine lovers
By APC Reviews
I thought that I knew a fair bit about wine. But after reading "The Science of Wine: From Vine to Glass" I realized that I had been stumbling around for years with a lot of second hand and received wisdom, some of which it turns out was part myth and lore more than fact. This is just a marvelous book for wine lovers. Admittedly, it is technical in many ways. But the author writes with just the right balance of erudition, knowledge, science and example to explain plant biology and wine making science, history and procedures so succinctly that the basic concepts become readily understandable. This is a wonderful book, and an invaluable resource for any wine lover wanting to know more about how the wine in their glass got there and tastes the way it does.

Understanding wine without needing an enology degree
By John R Windle
After years of drinking wine and reading periodicals I was looking for something that would help me separate the science from the hype. Jamie Goode has concisely, cleanly, and intelligently touched on subjects from terroir to tasting with objectivity. In the end he acknowledges the sum is greater than the parts, but understanding the parts helps us produce "and drink and enjoy" better wine.

Roughing It (Mark Twain Library), by Mark Twain

Mark Twain's humorous account of his six years in Nevada, San Francisco, and the Sandwich Islands is a patchwork of personal anecdotes and tall tales, many of them told in the "vigorous new vernacular" of the West. Selling seventy five thousand copies within a year of its publication in 1872, Roughing It was greeted as a work of "wild, preposterous invention and sublime exaggeration" whose satiric humor made "pretension and false dignity ridiculous." Meticulously restored from a variety of original sources, the text is the first to adhere to the author's wishes in thousands of details of wording, spelling, and punctuation, and includes all of the 304 first-edition illustrations. With its comprehensive and illuminating notes and supplementary materials, which include detailed maps tracing Mark Twain's western travels, this Mark Twain Library Roughing It must be considered the standard edition for readers and students of Mark Twain.

Amazon.com Review
There is no nicer surprise for a reader than to discover that an acknowledged classic really does deliver the goods. Mark Twain's Roughing It is just such a book. The adventure tale is a delight from start to finish and is just as engrossing today as it was 125 years ago when it first appeared.

Roughing It tells the true-ish escapades of Twain in the American West. Although he clearly "speaks with forked tongue," Roughing It is informative as well as humorous. From stagecoach travel to the etiquette of prospecting, the modern reader gains considerable insight into that much-fictionalized time and place. Do you know about sagebrush, for example? Sage-brush is very fair fuel, but as a vegetable it is a distinguished failure. Nothing can abide the taste of it but the jackass and his illegitimate child, the mule. But their testimony to its nutritiousness is worth nothing, for they will eat pine knots, or anthracite coal, or brass filings, or lead pipe, or old bottles, or anything that comes handy, and then go off looking as grateful as if they had had oysters for dinner. Roughing It is informally structured around the narrator's attempts to strike it rich. He meets a motley, colorful crew in the process; many mishaps occur, and it shouldn't surprise you that Twain does not emerge a man of means. But he withstands it all in such a relentless good humor that his misfortune inspires laughter. Roughing It is wonderful entertainment and reminds you how funny the world can be--even its grimmer districts--when you're traveling with the right writer.

From Library Journal
In this 1872, Twain reminisces about his five years of roaming around the country from 1861 to 1866. This edition contains the complete original text plus the original illustrations. Though pricey, this volume should be considered for collections specializing in Twain.

A fun read, and some history too
By Matthew Taylor
The genius of Mark Twain is that his work is still enjoyable, and funny, to this day. This book, originally published in 1871, is Twain's account of his journey from Missouri to Hawaii (called the Sandwich Islands in his day). He tells story after story of his adventures along the way, starting with the stagecoach ride on the Overland Stage Line to Carson City, Nevada, around 1861, and then telling of his stay in Nevada, then California, then his visit to Hawaii. The stories are informative, humorous, and all-around entertaining. He lampoons everybody he can--nobody is safe--including miners, pioneers (emigrants), politicians, Mormons, Blacks, American Indians, Chinese, newspaper reporters, "desperados", even himself on more than one occasion. Sometimes his stories are so outrageous that you wonder how much is true and how much is embellishment, or just outright fiction. Even he understands this by telling the reader on occasion that he has not made up a particular story, to demonstrate that truth is often stranger than fiction, but also to imply that he has taken liberties in other places in the book. (I wonder if the Mormon Church has ever banned this book for the things he says about them.) Even while he is being irreverent, however, he often demonstrates a sensitivity toward people, with an awareness of the situation of others that seems to me to be ahead of his time. For example, he has a chapter on the immigrant Chinese population in the West, and while he pokes fun at them in some respects, he spends the time detailing their lives and culture, as much as he could understand it, with a respect that was uncommon in his day.
I bought a copy of this book years ago because I am a native Californian, and knew that there was some material in here about California in the early days (my copy is an old hardcover published by Grosset and Dunlap). As Twain states in his Prefatory: "...There is quite a good deal of information in this book. I regret this very much, but really it could not be helped." I enjoyed reading about the "old West" from an eye-witness, although most of it deals with Nevada, not California. While some of it sounded familiar, like something from any Western-genre movie, other things were like nothing I had ever heard of before, describing the "Wild West" from an original point of view. In that respect, this book is a great resource.
This book falls short of five stars due to some minor flaws. He often digresses with text that is not only marginal to the point, but not even written by him, reprinting someone else's text. I skipped over some of that. He would also spend pages detailing coversations between other people that he could not have possibly remembered verbatim. While I understand that it was a common writing style of his day, it sounds like bad jounalism today. Those complaints aside, this is some great writing by Twain and some valuable American history.

ROUGHING IT
By G L Nelson
This "Mark Twain Project" paperback edition of ROUGHING IT is by far the best version for most readers. It is an excellent value. The 200 pages of "Explanatory Notes" at the end, add greatly to the modern reader's understanding of the 1860's "Wild West". The Early Western Mining Frontier comes vividly and colorfully to life, thanks to the Explanatory Notes' full illumination of the fascinating, often hilarious, eyewitness account of young Sam Clemens.

The 21st century reader now sees the momentous impact of Samuel Colt's "Navy Revolver" on frontier society, fully comprehends a "Stamp Mill's" importance to the silver mines of the Comstock Lode, and is in complete agreement about the "thoroughbrace's" necessity to the Overland Stage traveler's comfort! This edition also contains all 304 first edition illustrations, another great aid allowing the modern reader to take a virtual walk into a vanished time.

In the "Foreword" to this edition, Editor Harriet Elinor Smith notes, " The vernacular style of ROUGHING IT often seems surprisingly fresh to modern readers.....". I'm betting that many readers, younger ones especially, may approach this book with dread, only to become immersed in the rollicking adventure, and reach the end of ROUGHING IT with regret. The readers who return for a second, third or more reading, will discover many levels of depth to ROUGHING IT that will continue to entertain and educate reading after reading, year after year.

From the "Foreword" to this edition, Editor Smith also observes, "Although readers have long been entertained by ROUGHING IT, it has gradually become part of all serious study of American culture. Students of history have come to rely on it for accurate information about the period, and it has played a major role in shaping the myth of the "Wild West".......No examination of American popular culture would be complete without Mark Twain's imaginative reminiscence of what it was like to be "on the ground in person"".

So, if you are tired of all this bickering between the North and South, and feel it may be healthier to get away from the tensions, I hear tell there's a great silver strike in a new territory called "Nevada", near a place called "Virginia City". It's July 1861 and there is an Overland Stage westbound, St Joseph, Missouri to Carson City, Nevada Territory.

Buckle on your Navy Colt and climb aboard!

Thank Goodness!
By Eric Wilson
Twain is a storyteller in the old-fashioned sense of the word. He spins his tales, weaves his lies, and draws us in with the skill of a magician. Dividing fact from fiction is not always easy in a work such as this. "Roughing It" has moments of obvious hyperbole, grounded by stories of true difficulty. Yet throughout, Twain finds a way to make us smile, even laugh out loud. We are amused by the eccentric characters and turns of events which he describe, and find that we are not so far different as we might like to think.
The story follows Twain's journey as he travels west by stagecoach, train, wagon, horse, and ship. He meets surly frontiersmen, murderers, thieves, fortune-hunters, and men of ill-repute. Even here, he finds the good beneath the dirt. I especially enjoyed his anecdote of Scotty Briggs, a man trying to hire a minister to attend over his friend's funeral. Hilarious stuff! And so true to human nature.
Throughout his account, Twain makes a habit of degrading his own work ethic, nudging us in the ribs as he highlights his aversion to labor. With this in mind, the title seems to be a tongue-in-cheek affair. In fact, I found his accounts much less rustic and more modern than expected. Sure, we can travel across the U.S. quicker these days, but the politics and economics of Twain's age parallel our own. Will we never learn? Isn't this the point of history, to avoid repeating our errors?
Although criticized in his day for using coarse language and a working-class, Twain held to his guns and gave us some magnificent humor with which to swallow his pointed barbs. He was a master satirist, and even in a travelogue such as this, his views shine through. And thank goodness! A century and a half later, I'm thankful for his insights.
